Superfood salad with omega-3

This superfood salad with Omega-3 is packed with nutrients and quick to prepare, making it perfect for a quick lunch or dinner. The crunchy texture of fennel, white cabbage and carrots is combined with a delicious dressing of extra virgin olive oil, apple cider vinegar, white balsamic vinegar, tahini, mustard and honey, flavored with a pinch of salt and pepper. Roasted chickpeas seasoned with curry powder and olive oil add a crunchy texture and savory flavor, while sprouted sunflower seeds, fresh parsley and dill give the salad a delicious finishing touch. Ingredients for about 6 servings

Salad
- 1 fennel
- 1/2 small white cabbage
- 2 medium-sized carrots

Dressing
- 5 tbsp. extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp white balsamic vinegar 
- tahini
- mustard
- honey
Pinch of salt & pepper to taste

Roasted chickpeas
- 1 pot of cooked chickpeas
- 1 tbsp curry powder
- Olive oil
- Pepper & salt to taste

Toppings:
- 1 handful of sprouted sunflower seeds
- fresh parsley 
- 1 handful of fresh dill

1 tablespoon of NORSAN per serving Omega-3 Total1 tbsp. NORSAN Omega-3 North Pole or 1 teaspoon NORSAN Omega-3 Vegan Oil

Preparation:

  1. Wash the vegetables and cut into fine strips. Place in a bowl and mix with 1/2 teaspoon salt. Knead briefly with your hands and set aside. 
  2. Mix the chickpeas with olive oil and spices and bake in the oven or airfryer. Bake in the airfryer at 170°C for about 15 minutes, stirring occasionally. 
  3. Wash and finely chop the dill and parsley and set aside. 
  4. Prepare the dressing and mix with the vegetables. Add the roasted chickpeas, herbs, toppings and NORSAN Omega-3 Add oil and serve.
